Traveling North in Vietnam: Seafood Focus

Traveling North in Vietnam to Dong Ha in the Quang Tri Providence has brought us closer to the sea and thusly Seafood. And it has been wonderful to taste that influence in the foods.

For example, take the lowly squid. Boiled it doesn’t do much more most people but serving it with cilantro, morning glory and with a lime drenched salt and pepper mixture and it really livens up the dish.

Or take the prawns that are as big as most lobsters. We had one that was rubbed in a citrus chili paste and grilled on ginger leaves. It was served on a bed of fried shallots. Fantastic balance of flavors.

Chili salt and a lime was not only a great food condiment for steamed fresh crab but wonderful with a cold beer.

One of our favorite dishes was the clams in a ginger and lemongrass broth. The clams were soft and the lemongrass not over powering. The broth was easily drunk with white rice.
